graduation card


Graduation card I made for our niece.
Two sided paper, and the school colors are purple and gold. 
I used the polka-dot paper on the inside with the sentiments.

Hobo Stew

This is not a pretty dish, but it is really good.

This is a boy scout campfire recipe but it works well on the grill.

Ingredients

Meat of your choice ( we used uncooked ground beef)
Anything with a liquid, we used canned green beans, chicken and stars soup.
Then anything else that you would like.
For instance:
frozen pearl onions
frozen corn
canned tomatoes
rice
celery
carrots
diced potatoes
Take a large piece of foil, put the meat in first, then the other ingredients and top with the liquid. 
Fold up tightly and then put another foil around it.  Label it with sharpie with your name. 

Cook in a 350 degree grill, turning it over a couple of times, for 1 hour. This didn't heat up the kitchen but it is very healthy, no frying and you get your vitamins with the vegetables.

Breakfast Cookies

I like some kind of treat with my breakfast in the morning.
I take my breakfast to work so I altered a recipe to make these oatmeal cookies but they are not really sweet.
Kind of like scones. That way I get fiber, protein and not too much sweets or fats but fruits.
Here is my recipe.

Ingredients


3 cups quick cooking rolled oats
1/2 cup white flour
3/4 cup wheat flour
1/2 tsp. baking soda
3/4 tsp. salt
1/2 cup packed brown sugar
1 egg
1/4 cup milk
1/2 cup butter melted
1 cup cinnamon applesauce
2 scoops vanilla whey protein powder
1/2 cup raisins

Mix all ingredients together and scoop onto a sprayed cookied sheet.  I used a pampered chef scoop.  Bake at 350 degrees for 12 minutes. 
I packaged them two in a sandwich bag and put them in the freezer, that way when I pack my breakfast and lunch and can just pull a package out of the freezer. 

*Hint* Warm these up in the microwave for 15 seconds before eating.

Strawberry Angel Food Dessert


Here is a recipe that is so easy, and the taste is out of this world.


The red strawberry glaze makes it so beautiful.
Here it is....

Ingredients
1 10 inch angel food cake
2 8 oz. pkgs cream cheese
1 cup white sugar
1 8 oz. thawed whipped topping
1 quart fresh strawberrys sliced
18 oz. strawberry glaze

1.Tear the cake into bite sized pieces and spread in a 9 X 13 glass pan.
2. Mix together the cream cheese, sugar and fold in the whipped topping.
3. In a bowl combine the strawberries and glaze.
4. Spoon the cream cheese mixture over the cake and then spread the strawberry mixture on top.
Cool before serving.

I used the lower fat cream cheese and I think if the fat free version were used along with the fat free whipped topping the taste would most likely be the same. 

The family really loved this!!

Memorial Day

Both my Father and Father in Law were in the military.  My Father joined right after Pearl Harbor and my Father in Law was drafted into the Korean war.  They served and came home fortunately.  They both passed away in their 70's.  I am sharing their plaques that are provided for their final resting place.  Both have the flags that the boys scouts or the cemetery puts to note they were veterans.  On television this week I saw the soldiers at Arlington National Cemetery putting the flags on.  They all had their military camouflage on and their backpacks carrying the flags were camouflaged.  I am sure it was a great site to see in person. 

My Father was very proud to have this plaque and in the preplanning he filled out the paperwork to make sure everything was correct.
